Making Vegan Maple Bourbon Bacon Jam is simple and straightforward. With just a few steps, including sautéing, simmering, and mixing, this flavorful jam can be easily prepared in under an hour.

Shred the tofu with a box grater or using the grater attachment on a food processor.

Chop the red onions. Begin sauteeing them in a heavy-bottomed skillet with a bit of oil over medium heat. We’re not going to go slow enough to propery caramelize them, just get them softened and lightly browned.

Add the shredded tofu to the skillet with the red onions along with the spices and salt and pepper. Sautee the tofu until it’s slightly browned and has a more meaty texture, about 5 minutes. Add a bit of water, a tablespoon at a time, when needed to help with the cooking and to prvent sticking.

Add the remaining ingredients, along with some water, and continue to simmer over medium to medium-high heat for aout 10 minutes, until the mix has started to become thick.

Remove from heat and allow to cool.

How to Store

Once cooked this is much like freshly made jam. It will keep for up to a week or so in the refrigerator if kept in an airtight ontainer like a glass jar with a lid. If you think you’ll have lots left (although I don’t think you will!) you can also freeze this in any freezer safe container for up to a month or so.

  • 1/2 cup chopped red onion
  • 12 oz extra firm tofu, shredded
  • 1/2 cup water (more, if needed)
  • 2 teaspoons smoked paprika
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon pepper (or to taste)
  • 3/4 cup brown sugar
  • 1/4 cup maple syrup
  • 1 teaspoon liquid smoke
  • 1 ounce bourbon


  1. Shred 12 ounces of extra firm tofu using a box grater or the grating blade on a food processor.
  2. Saute the chopped red onions in a heavy-bottomed skillet in about a tablespoon oil over medium heat until they're softened and start to brown. Add 1/2 cup of water.
  3. Add the remaining ingredients and stir to combine.
  4. Let simmer for about 10 minutes, stirring often, until thickened and just a bit gooey. Keep in mind it will get thicker as it cools. Add more water during cooking if t gets too thick.
  5. Let cool and spoon into a clean jar or other container.
  6. Store in the refrigerator for up to a week or so. Freeze to store longer, using a freezer-safe container.
