Maple Bourbon Bacon Jam {but Vegan!}

Maple Bourbon Bacon Jam is a savory, sweet, and smoky spread. This one is vegan and made from shredded tofu, onions, garlic, brown sugar, maple syrup, and a splash of bourbon for extra flavor. Don’t worry, all of the alcohol in the bourbon is cooked off with only the flavor remaining. The ingredients are simmered together until they form a thick, rich, gooey jam with a tasty and complex flavor profile. This delicious, versatile condiment can be used on burgers, sandwiches, or as a dip, adding a unique blend of flavors. We used it on beyond burgers with VioLife mozzarella cheese … and :::chef’s kiss::: it was so good.

Shredded Tofu for Meaty Bacon Texture

Tofu adds a satisfying, protein-rich texture. It absorbs all the smoky, sweet, and savory flavors, enhancing the jam’s depth and mouthfeel, making it a hearty, plant-based alternative to traditional bacon.

Red Onions Add Loads of Flavor!

Onions add a sweet and tangy flavor to vegan maple bacon bourbon jam. They’re going to be caramelized and pretty much unrecognizable by the time we’re done but they really do add loads of flavor.

Bourbon Makes This Delicious

Just a splash of bourbon adds tons of flavor, too, of course! I used one of those little airplane sized bottles and it was the perfect amount for this recipe. All of the alcohol burns off in the cooking so all that’s left behind is the yummy taste.

Brown Sugar Keeps It Sweet

This is where most of the sweetness comes from in this recipe. I used dark brown but use what you have. It adds a rich, molasses-like sweetness that really enhances the savory flavors. Its deep caramel notes blend seamlessly with the smoky paprika and maple syrup, creating a well-balanced, indulgent jam.

Maple Syrup For Depth of Flavor

This smooth, amber syrup balances the smoky and savory elements, and is going to help this to stay nice and gooey and not crystallize.

Smoked Paprika for a Smoky Spicy Flavor

Its vibrant red hue and mildly spicy flavor enhance the jam’s complexity, complementing the sweetness of maple syrup and the boldness of bourbon perfectly.

Liquid Smoke Imparts a Deep, Smoky Flavor

It fairly accurately mimics the taste of traditional bacon, enhancing the savory notes and adding complexity to the sweet and tangy blend of ingredients.

Salt is Essential

This is one of the main flavors in anything to do with bacon. You might like more or less salt here so adjust accordingly.

Black Pepper is Delicious

Pepper adds a subtle heat and enhances the overall flavor profile. Its sharp, pungent notes balance the sweetness of maple syrup and the smokiness of liquid smoke, creating a well-rounded taste.

Shred the tofu with a box grater or using the grater attachment on a food processor.

Chop the red onions. Begin sauteeing them in a heavy-bottomed skillet with a bit of oil over medium heat. We’re not going to go slow enough to propery caramelize them, just get them softened and lightly browned.

Add the shredded tofu to the skillet with the red onions along with the spices and salt and pepper. Sautee the tofu until it’s slightly browned and has a more meaty texture, about 5 minutes. Add a bit of water, a tablespoon at a time, when needed to help with the cooking and to prvent sticking.
