Poached Avocados? 3 Minute Vegan Eggs? Whatever you want to call them, they’re delicious, healthy, and super easy to make.
Vegan Egg Options
There are lots of choices if you want something “egg-like” as a vegan. Tofu scrambles are delicious. Commercially available products like Vegg’s Power Scramble are another option. But if you’d like something more like a boiled or poached egg there aren’t as many choices.
Avocados Are Delicious
That’s where avocado eggs are deliciously helpful. They’re firm and full of healthy fat and have a sort of egg-like shape. I decided to make something like an avocado poached egg after finding these little dishes that look like huge egg cups. I don’t know what they were originally intended for, but they’re perfect for hold avos!
Kala Namak or Indian Himalayan Black Salt
Kala Namak is also known as Indian Himalayan Black Salt and can be found in some groceries and can also be ordered online.
Indian Himalayan Black Salt is actually quite pink when it’s ground up and it has a high sulfur content.
Because of its high sulfur content, kala namak both tastes and smells like real eggs (which also contain a lot of sulfur). This eggy salt can be added to tofu scrambles, the commercial products, or anything made with avocados and will be very much like eggs.
Vegan Egg Yolk
But what about the middle? What can make a vegan egg yolk? Well, this might not totally fool non-vegans but this vegan egg yolk is super tasty, eggy, and has zero cholesterol.
I’ve used almond butter for the protein and mixed it with a bit of maple syrup, mustard, and kala namak.
Then I sprinkled the whole thing with salt, pepper, crushed red pepper flakes, and some chives from the garden. Vegan bacon bits would be nice on the top, too!

These poached avocados or 3-minute vegan eggs are fast, east, and tasty. They're full of healthy fat and protein and make a substantial breakfast or snack!
Ingredients
- 1 ripe avocado cut in half, pit removed
- 2 tbsp almond butter
- 1 tbsp maple syrup
- 1 tsp mustard
- 1/4 tsp smoked paprika plus more to sprinkle on top if desired
- pinch kala namak salt plus more to sprinkle on top if desired
- black pepper
- crushed red pepper flakes
- chives, fresh or dried
- vegan bacon bits
- lime juice
Instructions

Cut the avocado in half and remove the pit.

In a small bowl, stir together the almond butter, maple syrup, mustard, smoked paprika, and kala namak salt. Spoon into the cavities in the avocado halves.

Sprinkle top of avocados with more smoked paprika and kala namak, if desired, as well as black pepper, crushed red pepper flakes, chives, and vegan bacon bits. A small squirt of lime juice is a nice way to top it off.
