Ingredients
In Smoky Roasted Potato and Chickpea Soup, each Blue Zone-inspired ingredient plays a delicious role. Potatoes provide a creamy, hearty base, perfect for blending into a velvety texture. Chickpeas add protein, a buttery bite, and a satisfying richness. Onions bring depth and a subtle sweetness as they caramelize. Garlic, roasted to perfection, infuses the soup with a mellow, nutty warmth. The spices, especially smoked paprika and cumin, deliver a smoky, earthy flavor that transforms simple ingredients into a comforting bowl of goodness. Together, these staples create a soup that’s as nourishing as it is flavorful—a true plant-based comfort dish.
Step-by-Step Instructions
1. Roast the Potatoes, Chickpeas, and Garlic
Preheat your oven to 425°F (220°C). Toss the diced potatoes and well-drained chickpeas with a drizzle of olive oil, smoked paprika, nutritional yeast, and a pinch of salt and pepper. Spread them out on a baking sheet and roast for about 20 to 25 minutes, stirring halfway through, until they’re golden brown and crispy. If you’re using fresh garlic, wrap the cloves in foil and roast alongside the potatoes.

2. Putting it All Together
While the potatoes are roasting, heat a tablespoon of olive oil in a large pot over medium heat. Sauté the diced onion until it’s soft and translucent. Stir in more smoked paprika, pepper, and salt, letting the spices toast for about 30 seconds to release their flavors. Add the broth and, when they’re done, add the roasted potatoes and chickpeas. Save the garlic to blend in the next step.
4. Blend for Creaminess
Purée about a quarter of the soup along with the roasted garlic until it’s very smooth, and add it back to the pot. Taste test and season with more spices to taste, if desired.

5. Make the Parmesan Croutons
While the soup simmers, toss your favorite bread cubes (I used rye sourdough because that’s what I had) with olive oil, vegan Parmesan, garlic powder, and a pinch of salt. Spread them on a baking sheet and toast them in the oven at 400°F (200°C) for about 8 to 10 minutes, or until they’re golden and crispy. You can also toast them in the air fryer at the same temperature for about 4 or 5 minutes.
6. Serve and Enjoy
Ladle the soup into bowls and top each with a handful of Parmesan croutons. Garnish with fresh parsley or an extra sprinkle of vegan Parmesan if you’re feeling fancy. Grab a spoon and dig in!

Tips for Perfect Soup
Roast the Garlic: Roasting garlic mellows its sharpness and adds a sweet, nutty flavor that’s unbeatable. Don’t skip it if you have the time!
Customize the Toppings: Don’t stop at croutons! Add a dollop of vegan sour cream, a drizzle of olive oil, or even some crispy chickpeas for extra crunch.
Make It Ahead: This soup tastes even better the next day, so feel free to make it ahead of time. Just store it in an airtight container in the fridge and reheat it when ready to serve.

Why This Soup is Perfect for Meal Prep
Not only is this Smoky Roasted Potato and Chickpea Soup incredibly satisfying, but it’s also ideal for meal prepping. You can make a big batch and enjoy it throughout the week. Here’s how to store it:
Refrigerate: Store in an airtight container for up to 5 days.
Freeze: Portion into freezer-safe containers and freeze for up to 3 months. Just thaw in the fridge overnight and reheat on the stove.
Croutons: Store separately in an airtight container to keep them crispy.
