To be honest, I don’t know if this BBQ tofu sweet potato sandwich recipe is complicated enough to actually qualify as a recipe. It sure was good for today’s lunch, and super easy to make.

I’m able to come home for lunch most days and was really in the mood for something that was both hearty and spicy.

Combined with the creaminess of the avocado, it was perfection.
I used a store bought BBQ sauce for this, because I was rushed. But if you’d like to make a homemade BBQ sauce, this Quick and Easy Vegan Barbecue Sauce is one of my favorites.


BBQ Tofu Sweet Potato Sandwich
Ingredients
Instructions
- Press the tofu for at least a half hour. This can be done overnight in the fridge, as well.
- Cut the tofu into 1/4 inch thick slices.
- In a medium saucepan, saute the tofu, mushrooms, and onions in a small amount of water, veggie broth, or oil until browned and tender.
- Add the BBQ sauce and simmer for about 5 minutes until the sauce is reduced and thickened.
- Serve on toast, bread, or wraps topped with baked sweet potato slices and avocado slices. Add a bit more BBQ sauce and salt and pepper to taste.
