I used two 15-ounce cans of chickpeas, drained, and rinsed them, and then patted them dry. It’s important to get most of the moisture off them so they’re not soggy.

Apples add a crisp, sweet crunch and natural sweetness. I like Honeycrisp or Fuji apples in this salad. Both are sweet and crispy and great for eating raw.

Pecans are here for their tasty buttery crunch. I used toasted pecans. They just taste better and are crispier. See below for easy instructions on how to toast them at home.

Substitutions: If you don’t have or don’t like pecans, just sub for an equivalent amount of toasted walnuts or almonds or whatever nuts you like. And any chopped and dried fruit can be added in place of the raisins or dried cranberries.

Keep apples from browning: Once you’ve chopped the apples, soak them in salt water for a few minutes to prevent them from turning brown. Just use a half teaspoon of kosher salt to one cup of water. I don’t always do this, but it’s a nice extra step, especially if you’re making this as meal prep and/or plan to store it for a few days.
