Meatloaf and mashed potato cupcakes combine two tasty comfort foods into one delicious, hand-held package. Amazingly, these are vegan and totally plant-based. They can even be easily made without any oil at all.
Make a batch of Easy Vegan Meat Substitute and add the spices. Mix it all well.
Then divide the meat substitute mixture into 9 to 10 even balls. Using your hand, flatten them into rounds then press into the bottom and up the sides of a cupcake tin. Use a nonstick cupcake tin or place a circle of parchment paper in the bottom of the tin to prevent sticking.
Bake at 400 degrees F for about 15 minutes.
Add a scoop of mashed potatoes to each meatloaf crust.
