Vegan Sausalito Cookies Pepperidge Farm Style Gluten-Free

These Vegan Sausalito Cookies are made Pepperidge Farm Style and are gluten-free. If you've craved this old favorite full of chocolate chunks and macadamia nuts but haven't been able to indulge, I've got you! These are easy to make and are pretty close to the originals.

Ingredients

Wet Ingredients

Dry Ingredients

  • 1 1/2 cup Gluten-Free All-Purpose Baking Flour Mix or use Bob's Red Mill 1-to-1 Gluten-Free Baking Flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Fold In

  • 1 cup vegan chocolate chunks
  • 1/2 cup macadamia nuts chopped

Instructions

  1. Preheat oven to 350 degrees F.
  2. Cream together all the wet ingredients using a spoon or hand mixer.
  3. Sift together the dry ingredients and add to the wet ingredients. Mix by hand with a spoon or hand mixer. I recommend the hand mixer since you do want everything really well incorporated.
  4. Fold in the chocolate chunks and macadamia nuts.
  5. Spoon onto an oiled or parchment-lined cookie sheet about 2 tablespoons or so of dough at a time. Flatten the dough just a little.
  6. Bake at 350 degrees F for 11 to 13 minutes until the top and edges begin to brown.
  7. Allow the cookies to cool completely.
