Peanut Butter and Chocolate Mug Cake for Two is delicious and quick to make and just the right size to share with someone special. This recipe is vegan and uses gluten-free flour.
In a large soup-sized mug at least 16 oz, add the flour, sugar, baking soda, baking powder, and salt and stir to combine.
Add the applesauce, peanut butter, vanilla, and plant-based milk and stir well to combine.
Gently fold in the chocolate chips or chopped chocolate. Save a few chips to add to the top.
Microwave for two minutes. The majority of the mug cake will be firm and cakey and the very center may be slightly gooey. If it's not firm and cakey after 2 minutes, continue microwaving at 30-second intervals until it's the right state of doneness.
