Chocolate Orange Depression Cake is a simple to make, vegan and gluten-free version of the old-fashioned recipe that uses commonly found pantry items.
Preheat oven to 375 degrees F.
Grease one 8" round or square cake pan. Optionally, a layer of parchment paper cut to fit the bottom of the pan will make the cake even easier to get out once baked.
In a large mixing bowl, sift together all the dry ingredients and stir together until well mixed.
Add in the wet ingredients and mix with a hand mixer or wooden spoon for a few minutes until all ingredients are well incorporated.
Pour into the prepared cake pan and bake at 375 degrees F for about 35 minutes, until the center is done. It will feel springy and will not dent easily.
Remove from the oven and let cool in pan until the cake can be turned out of the pan and placed on a cooling rack.
Cool completely and then dust with powdered sugar and add a few orange slices and/or grated orange zest.
If using a packaged gluten-free flour, simply replace the three flours listed with 1 1/2 cups of your favorite gluten-free flour. You must still add the flaxseed but can omit the xanthan gum if your flour already contains it.
If using regular flour, simply replace the GF flours and xanthan gum with 1 1/2 cups all-purpose flour.
