Vegan GF Tomato Soup (Better Than Campbell's)

This Vegan Tomato Soup recipe is smooth, rich, tomatoey, with just the right amount of tomatoey sweetness. It's also super easy to make with commonly found pantry items.

Ingredients

  • 14.5 oz can of crushed tomatoes or stewed, diced, or whole tomatoes
  • 1 cup unsweetened plant-based milk I use So Delicious Unsweetened Coconut Milk
  • 1 cup water
  • 3 tbsp tomato paste
  • 1 tsp nutritional yeast
  • 1 tbsp rice flour or other GF flour
  • 1 tbsp sugar
  • 1 tbsp oil optional ... can omit if you like!
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt or to taste
  • 1/4 tsp pepper
  • pinch celery seed just omit if you don't have it!

Instructions

  1. Place all ingredients into a high-speed blender and puree until very smooth, about one minute.

  2. Pour into saucepan and heat through until hot.

  3. Serve piping hot alone or with vegan grilled cheese or with crackers or chips.

  4. Makes about four 1 cup servings.
