  • 24 oz frozen hash browns, bag vegan
  • 2 tbsp nutritional yeast
  • 1 tbsp instant potato flakes
  • 1 tbsp tapioca flour
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1/4-1/2 tsp red pepper flakes to taste
  • 1/2-1 tsp salt to taste
  • 1/2-1 tsp pepper to taste
  • 8 oz vegan cheddar cheese shreds Daiya or your favorite brand
  • 1 cup vegan milk unsweetened, unflavored


  1. Preheat oven to 350 degrees F.

  2. In a large mixing bowl, add all ingredients and mix until well incorporated and evenly distributed.

  3. Spread in a medium baking dish.

  4. Cover loosely with foil.

  5. Bake for 35-40 minutes until the potatoes are tender and edges are beginning to brown.

  6. Let rest for a few minutes before serving.

  7. Casserole (or leftovers) can be stored, covered, in the fridge for up to three days. Reheat in the oven at 350 degrees F for about 10 minutes until hot.
