Vegan Cheeseburger Mac and Cheese is the perfect go-to dish when you're craving a tasty, gooey, creamy, cheesy bowl of vegan comfort food. Simple, easy, delicious.
Cook the macaroni according to package directions.
While the pasta is cooking, in a large skillet over medium-high heat, saute the vegan meat substitute and chopped onions until browned. Use a bit of oil or just brown it without oil if using a nonstick pan.
Add the can of diced tomatoes and the salt and pepper to the meat substitute.
For the cheese sauce, use either homemade cooked potatoes and carrots or the canned versions.
Place the cheese sauce ingredients in a high-speed blender and process until smooth and creamy. Add a little oil, like olive oil, for a super creamy cheese. It's also just fine without.
Combine the cooked macaroni, the blended cheese sauce, the vegan meat, onion, and tomato mix and stir well. This can be transferred to a larger pot or bowl if needed.
Taste test and adjust seasonings.
Add vegan cheese shreds, if desired, and stir in.
Top with more cheese shreds, bac-o-bits, and chopped pickles. A tiny bit of mustard and ketchup on top was good, too.
