Easy and delicious, almost raw fruit tarts. Not complicated. Takes only a few minutes.
In a food processor, process the dates, desiccated coconut, oats, and salt until chopped up finely and it begins to stick together.
Press the crust mixture into one 7 inch tart pan or 2 to 3 smaller ones. Use the bottom of a small, flat cup to press it down well.
To make the filling. In a bullet type blender, puree the avocado, coconut milk, and sweetener.
Spread the filling evenly in the bottom of the tart crusts and add the sliced mango and/or blueberries.
