Ingredients

Sausage Cups

  • 1 batch easy vegan meat substitute from Planted365
  • 2 tsp fennel seeds, crushed
  • 1 tsp sage
  • 1/2 tsp thyme
  • 1/2 tsp basil
  • 1/2 tsp paprika
  • 1/2 to 1 tsp black pepper
  • 1/2 to 1 tsp crushed red pepper flakes
  • 1 batch tofu scramble
  • cooked hash browns, chopped

Instructions

Sausage Cups

  1. Make a batch of Easy Vegan Meat Substitute. Recipe available here at Planted365. Mix in the additional seasonings. 

  2. Divide the meat mixture into 10 to 12 even sections. using slightly wet hands, flatten and then press into the bottom and up the sides of a parchment lined or non-stick cupcake tin.

  3. Bake at 400 degrees F for 25 minutes, until lightly browned.

  4. Tofu Scramble and Hash Browns

  5. Prepare your choice of tofu scramble recipe and homemade or frozen hash browns.

  6. Fill the cups with the tofu scramble and some chopped hash browns and top with a bit of ketchup or Tabasco sauce!
