Cheesy Potato Meatball Bake

This Potato Meatball Bake is ooey, gooey delicious. It would be fantastic for dinner any night of the week but also make a great cheesy dish for Super Bowl or any other gathering.

  • 1 batch Easy Vegan Meat Substitute Make into Meatballs
  • 1 batch Easy Vegan Cheese Sauce
  • 6 to 8 medium potatoes
  • 1 1/2 cups marinara sauce
  • 1 handful chopped parsley optional garnish
  • salt and pepper to taste


  1. Make the Easy Vegan Meat Substitute from Planted365 and shape into meatballs. Saute them with or without oil until evenly browned. Set aside.

  2. Make the Easy Vegan Cheese Sauce from Planted365. Set aside.

  3. Peel half the potatoes and slice into 1/4 inch thick rounds. Use these to line the bottom of a baking dish and up the sides.

  4. Evenly distribute the meatballs over the potato slices. Chop or cube the remaining potatoes and sprinkle over the meatballs.

  5. Spoon the marinara sauce over the potatoes and meatballs. 

  6. Spoon the easy vegan cheese sauce over the top of everything. Use 1 to 2 cups, depending on your personal taste. 

  7. Cover with foil and bake at 375 degrees F for 50 minutes. Remove the cover and bake an additional 10 minutes. 

  8. Let stand for another 10 minutes before serving. Garnish with chopped parsley, if desired.
