Pear Crumble with Vanilla N'ice Cream is super quick and simple. Sweet but sugar-free. Vegan and plant-based.
Core the pears and slice them thinly. Arrange them in a small baking dish.
Mix together the remaining crumble ingredients and sprinkle over the sliced pears.
Bake at 375 degrees F for about a half hour, until the pears are nice and tender.
In a food processor or high-speed blender, process the n'ice cream ingredients until very smooth and creamy. Add more coconut or plant-based milk if needed for blending. This should be pretty sweet, but if you'd like it more to just add stevia to taste.
Spoon the warm pears over the n'ice cream and serve immediately.
