Onion Mushroom Vegan Gravy

Onion mushroom vegan gravy. Easy to make in less than 20 minutes in one pot with commonly available ingredients. Onions, shallots, and mushrooms. Oh my!

Ingredients

  • 2 tbsp oil
  • 2 large white and/or red onions, thinly sliced
  • 3 to 4 shallots, peeled and sliced optional
  • pinch salt
  • 12 oz fresh or canned mushrooms
  • 3 cups vegetable broth
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tbsp cornstarch
  • 1/2 cup water

Instructions

  1. In a heavy, large saucepan, gently saute the onions and shallots for 5-10 minutes. 

  2. Add the mushrooms and continue to cook them for another 5-10 minutes, until the onions are golden and translucent and the mushrooms are lightly browned and tender. 

  3. Add the vegetable broth, salt, and pepper. Turn up the heat to medium-high and bring to a gentle simmer.

  4. Make a slurry with the water and cornstarch. Mix together until the cornstarch is completely dissolved. Pour into the gravy.

  5. Stir and simmer for a minute or two until thickened.
