Wild Rice Stuffing with Fruit

Delicious and super easy. This vegan wild rice stuffing is perfect for any holiday but also quick and simple enough for every day!

Ingredients

  • 2 cups cooked wild rice or wild rice/quinoa blend
  • 1/4 cup chopped celery
  • 1/4 cup sliced onions
  • 1/2 cup grapes, cut in half
  • 1/2 cup chopped apple
  • 1/2 cup chopped pears
  • 1/4 cup dried raisins and/or dried cranberries
  • 1/4 cup chopped pecans or other nuts
  • 1 tsp sage
  • 1/2 tsp celery seed
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp thyme
  • 1 tsp dried onion
  • 2 tsp dried parsley flakes
  • 1/2 tsp crushed red pepper flakes optional

Instructions

  1. Cook wild rice or wild rice/quinoa blend according to package instructions.

  2. Saute the celery and onion in water or a little bit of oil until tender. 

  3. Mix everything in a medium baking dish and bake at 425 degrees F for about 20 minutes, until well heated through.
