Savory and hearty, the creaminess of the avocado makes this a perfect sandwich.
Press the tofu for at least a half hour. This can be done overnight in the fridge, as well.
Cut the tofu into 1/4 inch thick slices.
In a medium saucepan, saute the tofu, mushrooms, and onions in a small amount of water, veggie broth, or oil until browned and tender.
Add the BBQ sauce and simmer for about 5 minutes until the sauce is reduced and thickened.
Serve on toast, bread, or wraps topped with baked sweet potato slices and avocado slices. Add a bit more BBQ sauce and salt and pepper to taste.
