BBQ Tofu Sweet Potato Sandwich

Savory and hearty, the creaminess of the avocado makes this a perfect sandwich.

Ingredients

  • 6 oz tofu pressed
  • 6 oz mushrooms sliced
  • 1/4 cup onion thinly sliced
  • 1/2 cup BBQ sauce your fave
  • 1 sweet potato baked
  • 1 avocado ripe
  • salt to taste
  • pepper to taste
  • 2 toast, bread, or wrap

Instructions

  1. Press the tofu for at least a half hour. This can be done overnight in the fridge, as well.

  2. Cut the tofu into 1/4 inch thick slices. 

  3. In a medium saucepan, saute the tofu, mushrooms, and onions in a small amount of water, veggie broth, or oil until browned and tender.

  4. Add the BBQ sauce and simmer for about 5 minutes until the sauce is reduced and thickened.

  5. Serve on toast, bread, or wraps topped with baked sweet potato slices and avocado slices. Add a bit more BBQ sauce and salt and pepper to taste.
