These pretty rolls feature a two-layer rice paper wrapper with a beautiful layer of cilantro in between, adding extra freshness and flair. Packed with colorful veggies and sweet fruits, they’re a healthy, delicious choice for a light meal or snack that’s as tasty, so fresh, and beautiful. Rice paper is wrapped in two layers with cilantro leaves in between, with cucumber, watermelon, arugula, mango, carrot, onion, etc. wrapped in them.

Ingredients in the Spring Rolls
It’s really difficult to mess these up. Any combination of fruits or vegetables that you like can be wrapped in rice paper wrappers and dipped in sauce and be delicious. Choose any or all of the below and make yours exactly how you like.

Rice Paper Wrappers are thin, translucent sheets made from rice flour, perfect for wrapping fresh vegetables, fruits, and herbs. You can find them in the Asian section of most local groceries. You can also easily get them online. They’re available in round or square.
Mango … the juicy, sweet tropical fruits with vibrant yellow-orange flesh, known for their refreshing taste and smooth, creamy texture. They’re delicious in these wraps and harmonize with the spicier and saltier flavors. Mangos are available year-round in most groceries and will be the most affordable in spring and summer.
Cucumber has a crisp texture and mild flavor that goes with all the fresh ingredients.
Avocado is creamy and full of nutrients. They’re perfect for adding to the lighter fruits and will make these rolls a little more substantial as a snack or meal.
Onion contrasts with the sweetness and is so delicious.
Radish are crunchy, peppery root vegetables, adding a zesty bite!
Bell Pepper adds their crisp, sweet flavor and vibrant color.
Carrot shaved into thin strips adds crunch and beautiful color.
Tofu cut into thin strips can be added to these rolls for added protein.
Cilantro is the best. Here, it’s beautifully sandwiched in between two layers of rice paper wrappers and also added inside because it’s so delicious!
Lettuce and/or Arugula add even more fresh crunch and flavor.

Ingredients in the Sauce
Vinegar adds a tangy, acidic kick to this sauce, balancing the flavors and enhancing the freshness of the ingredients.
Crushed Red Pepper Flakes is used for heat, of course.
Maple Syrup is an easy way to add sweetness here. I like it better than using refined sugar.
Soy Sauce, the salty, savory condiment, is used to add depth, umami, and rich flavor.
Ginger is a fragrant and spicy root. Here, it adds fresh and bright flavor as well as a zesty and warming kick.
Sesame Oil is a rich, nutty oil that adds depth and flavor to this dipping sauce.
Lime Juice adds a bright, tangy freshness, balancing all the flavors with its zesty, citrusy punch.
How to Make the Spring Rolls
These couldn’t be simpler to make. Start with the rice paper wrappers.

Moisten one rice paper wrapper by running it briefly under warm water and lay it down flat. Add as many cilantro leaves as you want to and then cover with another rice paper wrapper that’s been run under water. It will all soften enough to fold in just a minute or two.

Place your desired ingredients in the center of the softened rice paper wrappers and then fold like a burrito.

Stir together the sauce ingredients and serve with the rolls. Yum!

- 24 Rice Paper Wrappers
- 1 large bunch cilantro
- 2 mangos
- 1 red onion
- 2 avocados
- 2 cucumbers
- 1 bell pepper
- 4 radishes
- 1 thinly sliced or grated carrot
- 6 ounces thinly sliced tofu
- lettuce, greens, arugula
- more cilantro
Sauce Ingredients
- 1/4 cup maple syrup
- 2 tablespoons vinegar
- 2 tablespoons soy sauce
- 2 teaspoons sesame oil
- 1 teaspoon crushed red pepper flakes (or to taste)
- 2 teaspoons finely grated fresh ginger or 1/2 teaspoon powdered ginger
- 2 tablespoons lime juice
Instructions
- Run one rice paper wrapper under warm water and lay it down flat. Place clean cilantro leaves on the rice paper wrapper. Wet another rice paper wrap in the same way and place over the first so the cilantro is sandwiched in between the two.
- Then, place your choice of fruit and vegetables in the center and wrap up like a burrito.
- Whisk together the sauce ingredients.
- Dip the wraps in the sauce and enjoy.
