Maple Lime Yogurt Dressing is Simple to Make!
This dressing is sweet and bright. It needs only three ingredients to be delicious. It’s just vegan unsweetened unflavored yogurt, lime juice, and maple syrup. It’s important to use the unsweetened and unflavored yogurt otherwise it will have vanilla and other flavorings in it. For this dressing that’s perfect with fruity salads, just stir together all the ingredients and it’s done.

Vegan Summer Salad: A Mix of Sweet Fruit and Savory Ingredients
Mixing sweet and savory together is one of my favorite flavor combinations. In this salad, just a few capers and olives add great contrast to the sweet strawberries and blueberries.
Cucumbers are fruit! They go surprisingly well with other fruit. They’re mild and delicious.

Vegan Summer Salad with Maple Lime Yogurt Dressing combines sweet fruit with tasty green leafy lettuce. It adds some contrasting savory flavors with onions, capers, olives, and pumpkin seeds.
Ingredients
Salad Ingredients
- 1/2 cup sliced fresh strawberries
- 1/2 cup cubed watermelon
- 1/2 cup fresh blueberries
- 1/2 cup sliced fresh cucumbers
- 1/4 cup roasted pumpkin seeds
- 2 tablespoons capers
- 2 tablespoons olives black, green, or kalamata
- 1 cup arugula
- 5 cups lettuce
- 1/4 cup shaved carrot
- 1 lime sliced for juice
- salt and pepper to taste
- crushed red pepper flakes if desired
Dressing
- 1/2 cup vegan yogurt unsweetened and unflavored
- 2 tablespoons lime juice
- 3 tablespoons maple syrup
Instructions

Prepare the salad ingredients and assemble.

Stir together the dressing ingredients and spoon over the prepared salad.

Add salt and pepper and crushed red pepper flakes to taste. A wedge of lime is nice to serve with this for a fresh squeeze of lime juice over the salad at the table/
