Vegan Sausalito Cookies Made Pepperidge Farm Style and Gluten-Free
LOTS of Chocolate Chunks and Macadamia Nuts for Delicious Vegan Cookies
These cookies are very close to what I remember them being. I’ve been vegan for about 14 years now and gluten-free for 8. So, it had been a long time since I had a Sausalito cookie.
Sausalitos used to be a favorite and I bought them every trip to the grocery store. Even friends of my kids remember having them usually available at our house (I’m looking at you, Moranda)!
Crispy and Delicious Gluten-Free Cookies!
These have the same crispy texture and chunks of chocolate and macadamias that made the originals so delicious. Don’t get me wrong, Lavender Organe Moon Cookies are delicious. So are Tahini Brown Sugar Cookies. But these are definitely a very welcome familiar old favorite!
Easy to Make Cookies!
These cookies are easy to make. They use ingredients that are mostly available in local grocery stores. It’s a basic dough using gluten-free flour and then adding in vegan chocolate chunks and nuts. I used Enjoy Life’s Mega Chocolate Chunks. They’re not the best for eating out of the bag (I know I’m not the only one who does this!) but they’re great in baked goods.
Easy Sausalito Recipe
For these cookies, I’ve used my own Gluten-Free All-Purpose Baking Flour Mix. However, if you don’t want to mix your own, Bob’s Red Mill 1-to-1 Gluten-Free Baking Flour is awesome and I highly recommend it. Either one makes baked goods with a great texture and flavor.
Macadamia Nuts in Cookies
There’s an old movie where a woman wins the lottery and the first thing she does with the money is buy a big jar of macadamia nuts. Actually, Nicholas Cage wins the lottery and shares his winnings with her. She was a waitress and it was based on a true story. It was a good movie if I remember correctly. Anyway, my meandering point here is that macadamia nuts can be a little more pricey than other kinds of nuts and if I won the lottery I’d buy a bunch of them, too.
They’re definitely essential, though, to make these resemble the originals.
Doesn’t Have to Be Gluten-Free!
Of course, if you’re not gluten-free simply use your favorite all-purpose flour in place of the gluten-free flour.
Here’s the recipe!
Vegan Sausalito Cookies Pepperidge Farm Style Gluten-Free
These Vegan Sausalito Cookies are made Pepperidge Farm Style and are gluten-free. If you've craved this old favorite full of chocolate chunks and macadamia nuts but haven't been able to indulge, I've got you! These are easy to make and are pretty close to the originals.
- 1 cup vegan chocolate chunks
- 1/2 cup macadamia nuts chopped
Preheat oven to 350 degrees F.
Cream together all the wet ingredients using a spoon or hand mixer.
Sift together the dry ingredients and add to the wet ingredients. Mix by hand with a spoon or hand mixer. I recommend the hand mixer since you do want everything really well incorporated.
Fold in the chocolate chunks and macadamia nuts.
Spoon onto an oiled or parchment-lined cookie sheet about 2 tablespoons or so of dough at a time. Flatten the dough just a little.
Bake at 350 degrees F for 11 to 13 minutes until the top and edges begin to brown.
Allow the cookies to cool completely.
