My dad used to make us pancakes on Saturday mornings. There’s nothing like waking to the smell of a delicious breakfast on a lazy sunny morning especially if it was summer vacation. Being vegan and gluten free hasn’t stopped me from enjoying lazy summer pancakes, either. Simple and delicious, these four ingredient pancakes from the Ordinary Vegan are easy to make and turn out thin and light. And holy moly … FOUR ingredients.
Lunch: Lime Chipotle Avocado Toast
This toast I posted a a couple days ago is great for either breakfast or lunch. It’s filling and will stay with you for most of your morning or afternoon. It takes about 4.5 minutes to make, too.
Dinner: One Pan Mushroom “Steaks” & Roasted Vegetables
Portabello mushrooms are one of my favorite dinner ingredients. They’re very “meaty” and just feel like dinner. This recipe from The Plant Philosophy uses common, ordinary ingredients but ends up being something really lovely and elegant.
Dessert: Blueberry Blackberry and Ginger Cheesecake
And speaking of lovely and elegant. OMG … look at this beauteous dessert. It’s a raw vegan cheesecake that looks absolutely amazing. Anthea, at Rainbow Nourishments, actually has a raw vegan cake business in Australia so you know this will be awesome.
