How does the weekend go by so fast, btw? It was rainy and dreary here in Michigan for most of it. We grilled in the drizzle (recipes coming later this week) and mostly just burrowed in PJs with some good flicks. Today’s menu is, therefore, coming down heavy on the side of comfort food. I’m OK with that.

Lunch: Vegan BBQ Rice and Beans Bowl
Oh, yes. BBQ + Bowl. Win-win. This hearty bowl from Deryn at Running on Real Food looks like it would make a flavor-filled, stubstantial lunch. Corn, green & red onion, pinto beans, and more make this super nutritious. I would think marinating the tofu overnight would be an option as well.
Dinner: Vegan Stuffed Shells with Spinach
When I said this menu was heavy on comfort food, I wasn’t kidding. And this stuffed shells recipe from Sina at Vegan Heaven deals out comfort in spades.
Dessert: Best Gluten Free Macaroons
Gluten free and just four ingredients. These gluten free macaroons from Namely Marly are genius. She even has tips to find the ingredients just in case your local store doesn’t carry them.
