Basic Vegan French Toast Recipe
The basic recipe for this vegan French toast is so simple that calling it a “recipe” may be an overstatement. For two servings, pour a half cup of Just Egg Liquid into a shallow bowl, add some cinnamon and a little brown sugar, whisk until blended.

Whisk Together Just Egg, Cinnamon, and Brown Sugar
Then dip both sides of your favorite bread into the mix until each side is covered. Then fry each side over medium-high heat, using a little oil or vegan butter if desired, until lightly browned.

Vegan French Toast made with Just Egg is tasty, gluten-free, and a great breakfast or brunch. Simple, delicious, and sweetly satisfying! Yum!
Ingredients
- 2/3 cup Just Egg liquid
- 1 teaspoon cinnamon
- 1 tablespoon brow sugar
- 8 slices of bread, can be slightly stale
- oil or vegan butter for cooking, optional
- Toppings:
- vegan butter
- bluberries
- maple syrup
- chopped nuts
- powdered sugar
Instructions
- Pour the Just Egg liquid into a wide, shallow bowl.
- Whisk in the cinnamon and brown sugar.
- Dip each side of the bread into the Just Egg mixture and fry/toast in a skillet on each side, for about 2 minutes, flipping when brown.
- Top with fresh blueberries, maple syrup, jam, chopped nuts, powdered sugar, etc.

My traditional French Toast recipe also includes some milk to provide sufficient batter for the 8 slices of bread. When I made this today, I added 3/4 soy milk to the egg, cinnamon, and brown sugar mixture. Family loved it!
