Corn Butter with Coconut Oil is Delicious!
There are a couple of corn butter recipes out there that use only corn, like this one, and are fab especially if you’re looking for something fat-free. But they’re not really exactly like butter. Close but … I wanted something more like real butter and thought the addition of corn would help make it both sweet and creamy. There are also many vegan butter recipes out there right now and most use nuts, which does make a delicious spread. I wanted something without nuts so it would be easier on digestion for many of us.
Corn makes it Sweet and TASTY!
Corn is naturally sweet. It’s where we get corn syrup from. It’s also naturally creamy, has some fat, and is yellow as well. Dairy butter is fairly sweet and the sweetness added here by the corn adds to the delicious flavor with any dairy. Win-win.
This recipe is SO fast and then it sets up so that it will hold its shape at room temperature just like “real” butter.
One of the things I don’t like about commercial vegan butters is they all come in plastic containers. This homemade version of vegan butter can be stored in glass or ceramic containers of your choosing.
No Palm Oil Butter
Palm oil is another reason to perhaps shy away from the vegan butters on store shelves. This recipe steers clear of palm oil.

Just a few simple ingredients … coconut oil, avocado oil, corn, and some spices …
Corn helps make it creamy and sweet!
Then just whir it up in the blender until it’s super smooth. This takes a minute or two depending on your blender.
Just pour it into a container and let it set up in the refrigerator.
Voila, tasty delicious vegan corn butter! It can be used in any way you like to use butter.

Vegan Corn Butter with Coconut Oil
Vegan Corn Butter with Coconut Oil is super easy to make with ingredients available at most local groceries. It's smooth, creamy, spreadable, and oh so buttery and delicious!
- 1 cup liquified refined coconut oil liquid but not hot
- 1/2 cup canned sweet corn, drained
- 3 tbsp avocado, canola, or vegetable oil olive oil may turn bitter
- 3 tbsp plant-based milk unsweetened and unflavored
- 1 tbsp lemon juice
- 1 tsp nutritional yeast
- 1/2 tsp salt adjust to taste
- pinch annatto tiny pinch for color (optional)
- pinch turmeric tiny pinch for color (optional)
In a high-speed blender, add all ingredients and puree until very smooth.
Pour into glass or ceramic containers and let cool in the refrigerator for 20 minutes until firm.
Use on toast or bread or in any recipe that calls for butter.
