Start with Vegan Chicken Patties

This tasty sandwich starts with crunchy and delicious vegan chicken patties. I’m calling them patties because they’re flat. They’re smaller so it might be argued that they’re nuggets. But they’re not really round enough to be nuggets. So there. Let me explain my logic. I like the crunchy outside which is maximized using a few smaller patties rather than a large one. Max crunchy coating is my excuse.

What are Vegan Chicken Patties Made of?

These vegan chicken patties are also gluten-free. Sometimes vegan chicken is made from seitan, which is mainly wheat gluten. To make these gluten-free, I’ve used chickpeas and pea protein to get a sturdy mix that will make these patties hold together.

Ingredients in Vegan Chicken Patties

Chickpeas: Also known as garbanzo beans, chickpeas are round legumes that are often used in Meditteranean dishes and in hummus. They’re high in protein and lysine and great on top of a salad, too. Here, they’re making a nice texture and adding their flavor and protein.

Pea Protein Powder: I like pea protein powder for protein shakes and other things. It works here to help everything stick together and also adds a lot of f protein.

Just Egg: Just Egg (which is great when used in baking) is fantastic at holding things together and that’s why I’ve used it here. It also adds some flavor.

Gluten-Free Bread Crumbs: Breadcrumbs act as a bind as well. I’ve used gluten-free vegan ones. But for sure, use wheat ones or make your own.

Nutritional Yeast: There’s something magic about nutritional yeast. In cheesy things, it tastes like cheese, but it also tastes like chicken in chickeny things. I added it here for its “chicken” flavor.

Chicken Bouillon Paste (or Cubes): I love bouillon paste and use it in a lot of dishes. Here, it just adds more to the overall chicken-like flavor.

Rice Paper Wrappers (optional): These are optional. I used them for a slightly crunchy outside but found they mostly helped the patties stay together when dipping in the milk and bread crumbs. I would use them again. They kind of disappear after cooking in the air fryer but would make a crunchy “skin” like thing if they were deep fried.

Just blend together the chickpeas, pea protein, breadcrumbs, bouillon, nutritional yeast, and spices in a food processor. Stop just shy of smooth. These are better when there’s just a little texture left in the mix.

Vegan and Gluten Free Breading for Chicken Patties

Making a crunchy and delicious breading for the “chicken” patties is super easy. For these I used a simple four step process. Four steps sounds complicated but it’s not! I dip these in plant-based milk, then into seasoned flour, back to the milk, and then in seasoned breadcrumbs. Easy.

Rice Paper Wrappers Are Optional!

Before the breading process, I made these patties both with and without wrapping them with rice paper wrappers. I used them initially because I thought they would give a kind of crunchy, stretchy “skin” texture. And they do if they’re fried with oil. If they’re put in the air fryer with no additional oil, though, the rice paper wrappers just kind of disappear. But the rice paper wrappers serve another purpose that I really appreciated. They hold these together with no chance of them falling apart during the breading process. They also hold together pretty well without them. You decide. If you have them on hand and want to take this extra step, just moisten a wrapper and give it a few minutes to get nice and stretchy. Then cut it into quarters with a sharp knife or kitchen scissors. Then use each quarter to wrap the outside of a chicken patty before doing the breading process.

Air Fried Perfection

I put these in the air fryer for about 15 minutes at 375 degrees F and they turned out perfectly. I did add a few spritzes of oil using a sprayer. You can also do these in a regular oven on a parchment lined baking sheet for about 20 minutes at 375 degrees F. But there’s also the option to just fry them in a pan on the stove. They’re delicious all the different ways.

A nice bun or toasted bread, some onions, lettuce, and a vegan yum yum sauce and these are ready to go.

Ingredients

Chicken Patty

  • 15 ounces canned chickpeas, drained with the liquid reserved
  • 1/2 cup vegan breadcrumbs (GF optional)
  • 1/3 cup pea protein powder
  • 1/4 cup Just Egg
  • 3 tablespoon nutritional yeast
  • 1 tablespoon Better than Bouillon Vegan Chicken
  • 1 tablespoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon paprika
  • salt and pepper to taste

Breading Blend

  • 1 cup plant-based milk (unsweet, no vanilla)
  • 3/4 cup vegan breadcrumbs
  • 3/4 cup all purpose gluten-free flour
  • 1 tablespoon paprika
  • 2 teaspoons onion powder
  • 1 teaspoon basil
  • 1 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon thyme
  • 1/2 teaspoon oregano
  • 1/2 teaspoon ginger
  • 1/2 teaspoon dried mustard
  • 1/2 teaspoon celery salt

Instructions

  1. To make the chicken patties, place all the patty ingredients in a food processor along with 1/4 cup of the reserved chickpea water and pulse until well combined and almost but not quite smooth. Add more chickpea water if needed to form a workable dough-like consistency.
  2. Take about 3 tablespoons at a time and form into patty shapes.
  3. Optionally, once the patties have been formed wrap them with a quarter of a moistened rice paper wrapper.
  4. To prepare the breading, set out three medium bowls. To one, add the plant-based milk. To another, add the flour, and to a third, add the breadcrumbs.
  5. Mix all the spices together and divide between the flour and the breadcrumb bowls and stir with a fork to mix.
  6. Dip each of the formed chicken patties into the milk until both sides are coated. Remove the pieces from the milk and drege in the flour mixture until both sides are coated. Return the flour-covered pieces to the milk and dip until coated. Then dredge all sides in the seasoned breadcrumbs mixture.
  7. Place on an air fryer tray and air fry for about 15 minutes at 375 degrees F, until crispy.
  8. Alternatively, place the coated patties on a parchment-lined baking sheet and bake at 375 degrees F for about 20 minutes.
  9. Serve the chicken patties on a bun or bread with onions, lettuce, or other condiments. Drizzle with Vegan Yum Yum Sauce.
