Vegan Baked Brie is luscious, creamy, gooey, and delicious. The recipe uses simple ingredients, mainly potato and nutritional yeast. This yummy recipe is also nut-free and allergy friendly. It’s wrapped in a plant-based puff pastry, which can be regular or gluten-free. I used Schar brand gluten-free puff pastry, which my local grocery carries.

Vegan Baked Brie is Easy
This recipe has a few steps in it, but it’s quite easy. There’s nothing super difficult. Just blend the ingredients, heat the cheese, then wrap the cheese in the puff pastry. The last part, wrapping in puff pastry, was the most difficult for me! It was still pretty when it was done and delicious. Don’t worry too much if your puff pastry isn’t wrapped perfectly, it’s just rustic!

Vegan Baked Brie in Puff Pastry with Gluten-Free Options
Use your favorite vegan puff pastry. I use the Schar brand gluten-free one which is available in many grocery stores. If you can’t find it locally and need a gluten-free option, use the preceding link to find it on Amazon.
Ingredients in Vegan Brie
Tofu adds protein and a smooth texture when blended.
Potato Flakes are one of the main ingredients here, believe it or not. They provide the starchy stretch and the main bulk of the cheese. No, really. And it’s so delicious and, amazingly, tastes like the real thing. Any dried potato flakes will do.
Nutritional Yeast is one of the ingredients that give this vegan brie its cheesy flavor. Nutritional yeast is a deactivated form of yeast. It has lots of B vitamins and other nutrients and is also super tasty.
Lactic Acid is a vegan ingredient, even if it doesn’t sound like it. It’s made with fermented sugars and gives this and any other vegan cheese recipe a delicious, cheesy tang.
Lemon Juice is a supporting ingredient here. It also adds acidity but with a slightly different flavor profile. I like the combination of lactic acid and lemon juice.
Onion Powder & Garlic Powder add a touch of additional flavor.
Miso Paste is used in a small amount here. If you don’t have it, don’t worry about it. Just omit it. It can add another layer of flavor but isn’t essential.
Tapioca Flour (or Starch) is what makes this vegan brie nice and stretchy.
Mild Tasting Oil (Can Be Omitted) let’s face it, all cheese is a bit oily. A mild-tasting oil should be used here, like canola or peanut oil. The oil can be omitted but the final product will be slightly different.
Refined Coconut Oil is used as well to ensure the cheese is firm when chilled.
Salt is also a major flavor enhancer in cheese.
Puff Pastry wraps all the gooey yumminess up in a crispy package.

Additional and Optional Ingredients
Raspberry, Fig, Orange Marmalade, Peach Jam, or Cranberry Sauce are all tasty, sweet things that can be put on top of the brie before it’s wrapped in the puff pastry. Or, any of these would be good drizzled over the top after baking.
Rosemary goes exceptionally well with sweet jams on cheese. It just adds a delicious layer of flavor.
Roasted Pecans, Walnuts, Pumpkin Seeds, or Pine Nuts are crunchy and add texture and even more flavor.
Sun-Dried Tomatoes are perfect if you’re a fan of things less sweet.
Berries of all kinds would also be good served alongside the vegan brie.
Roasted Grapes on top are a delicious, sweet addition. That’s a link to a recipe for balsamic roasted grapes … they’re easy to make and taste just delightful.

Making a Disc of Cheese
This is pretty easy. Just pour the heated cheese mixture into a round dish that’s been lined with plastic wrap. I used a dish that was about 5 inches across. It was a perfect size. Use what you have to get a “brie-sized” disc.

Chilling or Freezing the Cheese Before Wrapping it in Puff Pastry
The cheese disc will hold its shape pretty well but will do this even better if it has been well chilled or even popped in the freezer for a half hour or so before wrapping with the puff pastry. Either way, the cheese does need to be chilled well before the puff pastry goes on. I put my puff pastry-wrapped brie into a small cast iron skillet that was lined with parchment paper. but any lined baking sheet will do.

Baking the Vegan Brie
Once the puff pastry is more or less neatly wrapped around the disc of vegan brie, simply brush it with a little Just Egg or aquafaba and bake it at 350 degrees F for about 25 minutes, or until the crust is nicely browned.

How to Serve Vegan Brie in Puff Pastry
This baked brie goes well with sliced apples or pears, pita wedges, crackers, or toasted bread. I used a sliced and toasted GF baguette and it was so good. Dip in or use a spoon to dish it out!

Ingredients
Cheese Ingredients
- 4 ounces of tofu
- one cup of potato flakes
- Half a teaspoon of garlic powder
- 2 teaspoons onion powder
- 3 tablespoons of nutritional yeast
- 1/2 teaspoon of lactic acid
- 1/2 teaspoon of salt
- 1 tablespoon lemon juice.
- 3 tablespoons tapioca flour
- 1 teapoon miso (optional)
- 1 1/2 cup water
- 2 tablespoons mild tasting oil (canola or peanut)
- 2 tablespoons REFINED coconut oil, melted (Not unrefined! It tastes like coconut!)
Other Ingredients
- 1 package vegan puff pastry (regular or gluten-free)
Optional Ingredients
- Any jam or cranberry sauce
- rosemary
- roasted nuts and/or seeds
- sun-dried tomatoes
- roasted grapes
- berries
Instructions
- Place all cheese ingredients into a high-speed blender and puree for a full minute or two until very smooth.
- Once smooth, pour into a medium-sized heavy-bottomed saucepan and heat gently over medium heat. Let simmer for about 4 minutes, stirring constantly, until smooth, glossy, and thickened.
- Let cool slightly then pour into a 6 in round dish that's been lined with plastic wrap. Smooth the top and then cover the top with plastic wrap.
- Chill the cheese in the refrigerator for at least 60 minutes. It can even be placed in the freezer for a while, it must be cold.
- Once the cheese is chilled, roll out a piece of puff pastry. Place the disc of chilled cheese in the center. Add any optional ingredients at this point. Then, pull the puff pastry up and over the sides and top. Use a small amount of water to seal the puff pastry, if necessary.
- Brush the pastry with a little Just Egg thinned with plant-based milk or with a small amount of aquafaba.
- Bake at 350 degrees F for about 25 minutes, until the puff pastry has started to brown.
- Serve immediately with crackers, pita, toast, apples, or pears. Dip directly into the gooey brie or use a spoon to dish it out.
