This Tuscan Chickpea and Kale Soup with Orzo is a hearty, nourishing bowl packed with protein-rich chickpeas, tender kale, and delicious orzo in a savory, creamy, herb-infused broth. Perfect for a cozy dinner, this one-pot vegan soup is easy, flavorful, and ideal for meal prep.
Ingredients
- 2 to 3 tablespoons olive oil
- 1 large onion, chopped
- 2 large carrots, chopped
- 3 celery stalks, chopped
- 1 medium zucchini, chopped
- 3 cloves garlic, finely minced
- 4 cups vegetable broth
- 2 tablespoons tomato paste
- 1 can diced tomatoes
- 1/3 cup chopped sun-dried tomatoes
- 2 cans chickpeas, drained (15 ounces each)
- 1 tablespoon Better than Bouillon Seasoned Vegetable Base
- 2 tablespoons nutritional yeast
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon sage
- 1/2 teaspoon thyme
- 1/2 teaspoon chopped rosemary
- 1/2 teaspoon crushed red pepper flakes
- 1 teaspoon black pepper (or to taste)
- 1 teaspoon salt (or to taste)
- 1 cup dried orzo pasta (regular or gluten-free or substitute with white or brown long-grained rice)
- 4 cups baby kale
- 2 tablespoons lemon juice (fresh or bottled)
- additional water, if needed
Instructions
- Heat the oil over medium-high heat in a heavy-bottomed large soup pot or stock pot and sauté the onion, carrot, celery, and zucchini for a couple of minutes, until it all starts to soften and brown slightly.
- Add the finely minced garlic and briefly sauté.
- Add the broth, tomato paste, diced tomatoes, sun-dried tomatoes, and drained chickpeas. Let simmer for about 15 minutes, stirring occasionally.
- Stir in the orzo and continue to simmer for another 8 to 10 minutes.
- Remove 1 or 2 cups of soup and purée in a blender until smooth. Add back to the soup. Alternatively, use an immersion blender to blend a small amount of soup to add some creaminess.
- Check how much liquid is in the soup and add water if needed.
- Remove the pot from the heat and stir in the baby kale. Allow a minute or two for the kale to wilt and add the lemon juice.
- Serve with crusty bread and/or vegan Parmesan.
- Store leftovers in an airtight container in the refrigerator for up to a few days.
