Tik Tok Pasta Vegan Recipe is Creamy and Delicious
The tomatoes roast and burst into tasty little blobs and the cheese adds the ooey, gooey lusciousness. I also added some sliced onions and minced garlic, which carmelized nicely in the simmering oil. Also, this here is gluten-free pasta. I used a GF fettuccini. But use what you like. Gluten is delicious, so use it if that’s what you prefer. And the pasta shape isn’t that vital either. The original recipe uses rotini, I think. Bowtie pasta would be really good here, so would shells.
The Original TikTok Pasta Controversy
Turns out this dish is the perfect thing if you’re craving something cheesy and carby. It’s not without just a bit of controversy, though! As is not terribly uncommon, one blogger came up with the recipe around the same time another blogger did. Then a third person made the TikTok video that went viral. At least that’s how I understand it. To give credit where credit is due, the blogger responsible for initially bringing attention to this delicious concoction is Jenni Häyrinen, from Finland. Here’s her BLOG POST. Previous to that, though, another blogger, Tiiu Piret, made a similar recipe. Long story short, others started making it on Tik Tok and, suddenly, everyone knew about it.
TikTok Pasta Done Vegan Style
So obviously, the difference between those earlier pasta recipes and this is the previous ones weren’t vegan. This one is. I’ve substituted Daiya provolone for the original feta. No, it’s not identical. But it does turn out creamy, cheesy, and so delicious. Daiya isn’t my all-time favorite vegan cheese. To be honest, Chao is my soulmate cheese. But I can’t get it locally. Remind me to submit a product request at my local grocery! Product requests actually work really well and can get your favorite products into your corner store.
Your Favorite Vegan Cheese
The important part of this recipe is that you use cheese … vegan cheese in this case. So just use your favorite, Cheddar probably isn’t going to work nearly as well as a paler cheese, like the Daiya provolone I used. Other options are Chao, and Violife has vegan feta cheese.
Simple Cheesy Vegan Pasta with Tomatoes
This recipe is super simple. Just about any pale vegan cheese is going to be tasty here. Then some good olive oil and about a pound of good cherry tomatoes. I found some on the vine ones labeled “Flavor Bombs.” They did not disappoint and tasted like garden-fresh summer tomatoes.
Roast the tomatoes, onions (optional), some whole garlic cloves or minced garlic, Italian spices, and olive oil.
Then drop in the vegan cheese and roast some more. Add some spinach leaves and finish roasting just until wilted.

Preheat oven to 350 degrees F.
In an 8" x 8" baking dish, place a pound of fresh cherry tomatoes, sliced onions, minced or whole garlic, olive oil, Italian spices, and salt and pepper.
Bake at 350 degrees F for 20 minutes.
Add the cheese in the center and return to the oven. Bake for another 10 to 12 minutes, until the cheese starts to brown slightly.
Add the fresh spinach and return to the oven for a few more minutes until the spinach is wilted.
