Sweet Potato Banana Mug Cake is Sweetly (almost) Sugar-Free!
It uses sweet potato and banana instead of refined sugar and lots of processed flours (it does use a little).
The calories are just a little lower than in other mug cakes I’ve made. It’s a delicious dessert but is also a great breakfast, too! This makes enough for two people using these amounts. If you want more or less just adjust the amounts accordingly.
Like many mug cakes, the texture is less cakey and more like a bread pudding. To make it, just mash the sweet potato and banana with a fork until they’re smooth and creamy.
Add a little flour, baking powder, vanilla, some stevia if you’re a sweet freak like me, and some chopped chocolate and pecans.
Bam. Two to three minutes in the microwave and it’s a hot tasty mug full of cake. Share it unless you’re super hungry or make half the recipe for one.

Ingredients
- 1/3 cup banana
- 1/3 cup cooked sweet potato flesh can be made fresh or use canned
- 2 tablespoons applesauce
- 1/2 teaspoon vanilla
- stevia to taste (optional)
- 1/4 cup gluten-free flour blend
- 1/4 teaspoon baking powder
- 1/8 teaspoon salt
- 2 tablespoons chopped vegan chocolate or chocolate chips
- 2 tablespoons chopped pecans
Instructions

In a large mug OR a small mixing bowl, mash the banana, sweet potato, applesauce, and vanilla until smooth and creamy.

Add the flour, baking powder, and salt and stir until well combined. Add stevia if you like it sweeter than it is naturally (which is pretty sweet!).

Gently fold in the chopped chocolate and pecans.

This can be mixed up in the mug this will be baked in or mixed in a small bowl and then placed in a mug. The second way makes a neater-looking mug cake but also an extra dish to wash!

If desired, add a couple of chocolate pieces and pecans on the to before cooking.

Microwave for about 2 minutes. Check the mug cake and, if needed, microwave in 30-second increments until the center is firm-ish. Enjoy!
