Roasted Peach Sandwich with Blueberry Balsamic Sauce has all the flavors. It’s sweet and savory and a little salty with roasted onions and fresh lettuce and cucumber. The blueberry balsamic sauce tops it all off deliciously, adding a punch of acidic sweetness. The balance of flavors is awesome. And it looks beautiful, too!

This is such a simple sandwich that I’m not even sure it’s an actual recipe. It’s more like a suggestion. I do know it’s been a hit with anyone I’ve made it for. I think it’s perfect for summer.

Roasted Peaches are Delicious on a Sandwich!

I was able to get a great bargain on a box of peaches at my local farm stand. They had a box of “seconds,” which means they were very ripe and also might have a few blemishes. The smelled amazing and it’s been a wonderful year for peaches so I got them. Because they were so ripe, I froze a lot for ice cream later. I’ll make some peach ice cream in the Ninja Creami like in this Chocolate Ice Cream Recipe. The slightly blemished fruit is perfect for roasting, too!

Start with sliced peaches and onions.

Start with Sliced Ripe Peaches and Onions

This is so simple. Slice some ripe peaches about 1/4 inch thick. Also slice some onions. I used red onions but use what you have. Toss them with just a little oil and a tiny splash of maple syrup and then air fry at 400 degrees F fo about 10 minutes, or until the peaches start carmelizing and the onions begin to brown.

Make the Blueberry Balsamic

While the peaches are roasting, whisk together about 3 tablespoons of blueberry preserves and about 1 tablespoon balsamic vinegar. If you don’t like or don’t have blueberry preserves, substitute your favorite preserve or jam.

Assemble the Sandwich

I added lettuce, some thinly sliced cucumber that you can’t see in the photos, a few triangles of plant-based cheese slices, and then loaded up with the roasted peaches and onions and a generous dollop of the blueberry balsamic.

The Flavors Go Together!

All the sweet and savory flavors go together so well. I made some of these to bring to the guys working on out house. I wrapped them up in plastic wrap and waxed paper. After the 10 or 15 minutes it took to get them to the job site, everything had really started to meld together. So there is always the option to wrap these for a few minutes, which makes them even more delicious!

Ingredients

  • 2 fresh, ripe peaches
  • 1/3 cup sliced onions
  • 2 teaspoons oil
  • 2 teaspoons maple syrup
  • 3 tablespoons blueberry preserves (or your choice of jam or preserves)
  • 1 tablespoons balsamic vinegar
  • thinly sliced cucumber
  • lettuce
  • plant-based cheese

Instructions

  1. Slice fresh, ripe peaches about 1/4 inch thick, discarding the pit. The easiest way to do this with freestone fruit is to slice around the middle, much like you would an avocado, and then pull the two halves apart. Then slice.
  2. Also thinly slice onions. Toss the sliced peaches and onion with the oil and maple syrup then air fry for about 10 minutes at 400 degrees F, until the onions get lightly browned and crispy and the peaches have browned and caramelized.
  3. Toast some good bread and layer with lettuce, thinly sliced cucumber, and plant-based cheese. Then add roasted peaches and onions to the top.
  4. To make the blueberry balsamic, simply stir the two ingredients together and spoon over the top of the sandwich filling. Enjoy open face or add another piece of toast to the top!
