Balsamic roasted grapes aren’t anywhere near complicated enough to call a “recipe.” They sure are delicious and sweet, though. They could probably be roasted with nothing at all and still be all warm and intense, but the sprinkle of balsamic was lovely.

Just wash a few bunches of grapes and put them in a baking dish. Sprinkle a couple teaspoons of balsamic vinegar over them, add a bit of salt and pepper, plus a sprig or two of rosemary for good measure, and roast in the oven for about 20 minutes at 400 degrees F.
That’s it.
They come out like this.

And they taste fantastic like this … over a bit of vanilla n’ice cream.

Roasted Nectarines
These roasted nectarines from Stacey Mattinson look wonderful. I like how she used unsweetened applesauce with them. Nectarines are generally available all year in most places. Ever get those kinds of hard, wee bit flavorless, never gets ripe nectarines? Try roasting them. It can bring out some flavor and sweetness in the less than perfect. Pears would be nice this way, too.
