Roasted Cauliflower and Sweet Potato Salad
Roasted cauliflower and sweet potato star in this delectable salad. With tender vegetables, fresh greens, and a delightful dressing, this roasted cauliflower and sweet potato salad is a wholesome and satisfying dish for any occasion.
Ingredients
Roasted Vegetables
- 1 lb cauliflower florets
- 2 medium sweet potatoes, peeled and cubed
- 1 tablespoon olive oil
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic powder
- tiny pinch of nutmeg
- salt and pepper to taste
- pinch of red pepper flakes
Hummus Dressing
- 1 can garbanzo beans including water
- 1/4 cup tahini
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 1 garlic clove
- salt to taste
- 1/4 water if needed to thin to desired consistency
Easy Vinaigrette Dressing
- 2 tablespoons wine vinegar
- 2 tablespoons lemon juice
- 1/4 cup olive oil
- 1 tablespoon brown mustard
- 1 teaspoon finely minced garlic
- 2 tablespoons olive brine
- salt and pepper to taste
- 2 teaspoons maple syrup, optional
- 1 to 2 heads of romaine and/or red leaf lettuce
Instructions
- Rinse the cauliflower and cut it into florets. Peel the sweet potatoes and cut them into bite-sized cubes. Toss with the rest of the ingredients to coat and then air fry at 375 degrees F for 20 to 25 minutes, until the vegetables are softened and slightly brown.
- While the vegetables are air frying, make the hummus dressing and vinaigrette.
- For the hummus dressing, place all the ingredients into a blender or food processor and puree until smooth, adding water until the desired consistency is reached.
- Whisk together all the ingredients in a cup or jar to make the vinaigrette.
- Spread a generous layer, about 1/4 in deep or more, of the hummus dressing on the bottom of a flat salad bowl.
- Rinse and chop the lettuce and arrange it on the hummus dressing layer. Add the roasted vegetables and some black olives.
- Finally, drizzle the top of the salad with the easy vinaigrette.
