It’s almost an overstatement to call this a recipe. It just doesn’t seem complicated enough. I thought they turned out pretty, especially in the heart-shaped tart tins that are yard sale bargains. Use whatever tin or container you have.

Blueberries and mangoes were on sale, so I picked up some dates and dried coconut for a simple almost raw crust. A bit of avocado and coconut milk for the filling and, voila, fruit tart. 

Strawberries would be nice in here, too. So would peaches or really ripe pears, or bananas, blackberries, kiwi, or cherries. Almost any of the fruits on this list of healthy ones would go well on this. Use what you like and is available.

I had maple syrup that I used to sweeten the filling, but any sweetener will do. Or, just leave it unsweetened.

This doesn’t save all that well, but if there are any leftovers (there won’t be!) put them in an airtight container in the fridge for up to a couple of days.

Almost Raw Fruit Tarts

Easy and delicious, almost raw fruit tarts. Not complicated. Takes only a few minutes.

Ingredients

Crust

  • 1 cup dates, pitted
  • 1/2 cup desiccated coconut
  • 1/2 cup quick or rolled oats
  • pinch salt

Filling

  • 1 ripe avocado
  • 1/4 cup full fat coconut milk
  • 3 tbsp maple syrup or other sweetener
  • 1 mango, thinly sliced
  • 1/2 cup blueberries
  • other fruit optional

Instructions

  1. In a food processor, process the dates, desiccated coconut, oats, and salt until chopped up finely and it begins to stick together. 

  2. Press the crust mixture into one 7 inch tart pan or 2 to 3 smaller ones. Use the bottom of a small, flat cup to press it down well. 

  3. To make the filling. In a bullet type blender, puree the avocado, coconut milk, and sweetener. 

  4. Spread the filling evenly in the bottom of the tart crusts and add the sliced mango and/or blueberries.
