Pad Thai Zoodles Vegan Gluten-Free Recipe

Pad Thai is traditionally made with rice noodles that are stir-fried. Tasty additions are tofu, bean sprouts, peanuts, and other vegetables. It can be as spicy or as mild as you like.

How to Make Zoodles

Talk about DIY noodles! We had loads of zucchini in the garden so we spiralized a couple to use as the noodle part of this dish. We lightly sauteed then but they’re also fantastic raw. They’re easy to make, too. One method is to run them through a spiralizer. This takes just a minute or two and results in long, even zoodles.

However, if you don’t have a spiralizer, just use a vegetable peeler. Slice your zucchini part way through lengthwise first. Then use the peeler to shave off layers of noodles. It’s that easy.

Pad Thai Zoodles Vegan Gluten-Free Recipe

Ingredients

  • 2 tbsp oil
  • 1 pkg extra firm tofu
  • 1/2 cup peeled and sliced carrots
  • 1/4 cup chopped onions
  • 1/2 cup sliced mushrooms
  • 1 or 2 zucchini peeled and spiralized
  • 5 tbsp teriyaki sauce
  • 1/2 tsp chopped red pepper flakes
  • 1/2 cup bean sprouts
  • 1/2 cup chopped peanuts

Instructions

  1. Heat the oil in a large, heavy-bottomed pot and saute the tofu for a few minutes until browned. Remove from the pot and set aside. Add the carrots, onions, and mushrooms to the pot and saute until slightly tender.

  2. Spiralize the zucchini using a spiralizer. Alternatively, use a vegetable peeler to make zucchini ribbons. Add to the pot with the sauteed vegetables and stir long enough to heat through. Add more oil to coat, if desired.

  3. Add the red pepper flakes and teriyaki sauce and stir. Remove from heat.

  4. Divide into bowls and top with the browned tofu, bean sprouts, and peanuts.
