Plant-Based Plain Unsweetened Yogurt: This adds so much for a moist and rich texture. I used an almond-based one, but any will do that doesn’t have an overpowering flavor.
Flour: All-purpose gluten-free or all-purpose regular flour can be used here with equally tasty results. I like Bob’s Red Mill 1 to 1 Baking Mix. It’s easy to work with and seems very close to regular flour.
Olive Oil: Oil adds moisture, and I used olive oil for a richer flavor. The orange and extra virgin olive oil go together really nicely.
Vinegar: Just a splash of vinegar stirred in just before pouring into a pan supercharges the baking soda for a light, springy loaf.
Sugar: Of course, you can’t make a loaf cake without sugar. I’ve lowered the sugar just a bit so it’s sweet but not overly so.
Vanilla: Just a tiny bit.
