This Potato Meatball Bake is ooey, gooey delicious. It would be fantastic for dinner any night of the week but also make a great cheesy dish for Super Bowl or any other gathering.

It’s super easy and uses common ingredients found at most local groceries.

To start with, you make vegan meatballs using our Easy Vegan Meat substitute.
Easy Vegan Meat Substitute
Make a full batch of the meatballs using the Easy Vegan Meat Substitute recipe. Then saute them either with or without oil (totally up to you) and set aside.

It’s really convenient to make a couple batches of the vegan meat substitute ahead for whatever you may be using it for. Just make your burgers or meatballs or crumbles and cook them using your preferred method. Then wrap and freeze. When you’re ready to use them, just heat them through from frozen. Easy.

Easy Vegan Cheese Sauce
The ooey, gooey part comes from our Easy Vegan Cheese Sauce. It really is easy to make and can also be made ahead of time, even a day ahead. It may thicken up but that’s easy to fix by adding a little water or plant milk. Click the link above or the pic below to go to the recipe.

So, once you’ve got those things made and set aside, it’s really just a matter of putting it all together with the potatoes and a little marinara sauce.

Peel and slice 3 to 4 medium potatoes and layer them in the bottom of a baking dish and up the sides.
Evenly distribute the meatballs on the sliced potatoes.
Peel and cube 3 to 4 more potatoes and sprinkle over the meatballs.
Spoon on the marinara sauce.
Then cover in the Easy Vegan Cheese Sauce.

Cover with foil and bake at 375 degrees F for about 50 minutes. Remove cover and bake another 10 minutes.
Let sit for about 10 minutes before serving. Garnish with chopped parsley, if desired.

Cheesy Potato Meatball Bake
This Potato Meatball Bake is ooey, gooey delicious. It would be fantastic for dinner any night of the week but also make a great cheesy dish for Super Bowl or any other gathering.
Ingredients
- 1 batch Easy Vegan Meat Substitute Make into Meatballs
- 1 batch Easy Vegan Cheese Sauce
- 6 to 8 medium potatoes
- 1 1/2 cups marinara sauce
- 1 handful chopped parsley optional garnish
- salt and pepper to taste
Instructions

Make the Easy Vegan Meat Substitute from Planted365 and shape into meatballs. Saute them with or without oil until evenly browned. Set aside.

Make the Easy Vegan Cheese Sauce from Planted365. Set aside.

Peel half the potatoes and slice into 1/4 inch thick rounds. Use these to line the bottom of a baking dish and up the sides.

Evenly distribute the meatballs over the potato slices. Chop or cube the remaining potatoes and sprinkle over the meatballs.

Spoon the marinara sauce over the potatoes and meatballs.

Spoon the easy vegan cheese sauce over the top of everything. Use 1 to 2 cups, depending on your personal taste.

Cover with foil and bake at 375 degrees F for 50 minutes. Remove the cover and bake an additional 10 minutes.

Let stand for another 10 minutes before serving. Garnish with chopped parsley, if desired.
