Ingredients

  • 1 head cauliflower, sliced into 1 in steaks
  • 1/3 cup vegan parmesan cheese
  • 1/3 cup maple syrup
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon pepper (or to taste)
  • 1/4 teaspoon crushed red pepper flakes (or to taste)
  • a light spray of oil
  • 1 batch of easy lemon hummus

Instructions

  1. Make a batch of Vegan Parmesan Cheese Recipe (or use store-bought)
  2. Wash the cauliflower and slice it into one-inch steaks.
  3. Sprinkle a generous layer of vegan parmesan cheese on a parchment-lined baking sheet and place the cauliflower steaks on top.
  4. Stir the maple syrup and cayenne pepper together to make a hot maple mixture.
  5. Pour the hot maple syrup mix evenly over the steaks and sprinkle more vegan parmesan cheese. on top.
  6. Spray the tops of the steaks with a very light and gentle coat of oil, if desired. This step is optional and can be omitted.
  7. Bake for 30 minutes at 375 degrees F or until the steaks are softened and lightly brown.
  8. Serve over a batch of Easy Lemon Hummus or your favorite hummus. A base of unsweetened unflavored vegan yogurt might be tasty as well.
