Ingredients in High Protein Chocolate Chip Baked Oatmeal

Oats are the main ingredient in this recipe. They’re a wholesome, delicious, nutrient-rich whole grain, packed with fiber, vitamins, and minerals. They provide sustained energy, support heart health, and aid digestion.
Cocoa Powder is a great source of antioxidants, iron, and magnesium. It even has protein. It adds a rich, chocolaty flavor.
Pea Protein Powder is a versatile plant-based protein made from yellow split peas. It’s easy to digest and allergen-friendly and rich in essential amino acids. My favorite pea protein powder is Anthony’s Pea Protein Powder (linked below). It’s great in this recipe but can also be used in smoothies. I even add it to bread and cake/cookie recipes.
Plant-Based Chocolate Chips are made without dairy. They have the same rich, sweet flavor as traditional chocolate chips, and are perfect for vegan baking, snacks, and desserts. I found them on sale locally for a ridiculously low price and bought a ton. They can be stored in the freezer for up to several months.
Walnuts are nutrient-dense nuts with a rich, earthy flavor and crunchy texture. In this recipe, they add healthy fats, protein, and antioxidants. Like chocolate chips, walnuts also do well when stored in the freezer. The cold temperature keeps their oils from going rancid.
Maple Syrup is a sweet, natural sap with caramel notes and the only sweetener in this recipe.
How to Make

This is so simple. Just mix the ingredients in a baking dish, add a few additional chocolate chips and walnuts to the top.

Then bake at 375 degrees F for about 30 minutes.

Substitute or Add pecans or your favorite nuts or seeds in place of the walnuts.

Ingredients
- 2 cup oats
- 1/3 cup cocoa powder
- 1/2 cup pea protein powder
- 1/3 cup maple syrup (optional)
- 1 teaspoon vanilla
- pinch salt
- 1/2 cup chocolate chips
- 1/3 cup walnuts
- 2 1/2 cups plant-based milk
- additional chocolate chips & walnuts
Instructions
- Mix all the ingredients together well in an 8x8 baking dish. Bake at 350 degrees F for about 30 minutes, until the top begins to lightly brown.
- Serve immediately or store covered in the refrigerator for up to a few days or in an airtight container in the freezer for up to a few weeks.
