Is this complicated enough to be called a recipe? I’m not sure. It’s so easy to throw together that it’s hard to say if this is an actual recipe or just a suggestion. I like it for when a heartier breakfast is needed, like on a weekend morning before spending a day out thrifting and visiting the local farmer’s market. That’s my ideal day. What’s yours? 

Anyway, this is good when you need long-lasting fuel and it’s super easy to put together.

I used about a half bag of the frozen, shredded hash browns.  These don’t cook quite as quickly as the rest so it’s important to let them thaw before putting this together. 

Hash Brown Tofu Scramble Sausage Bake

The tofu scramble is just a quick tossing together of smashed, firm tofu, and green peppers, onions, and mushrooms. I also add salt and pepper to taste and some onion and garlic powder as well as a dash of turmeric for color (you can omit this if you don’t like turmeric!). Add some Beyond sausage an vegan cheese shreds on the top and bake at 350 degrees F for about 25 minutes and, voila, a super filling, hot, and tasty breakfast.

This makes about 4-6 generous servings. Store any leftovers in the fridge for up to 3 days. It can be easily reheated in a microwave or oven.

Ingredients

  • 4 cups shredded hash browns, thawed
  • 1/3 cup chopped onion
  • 1/2 cup chopped green or red bell pepper
  • 1/2 cup mushrooms
  • 8 ounces firm tofu
  • 1 tablespoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon pepper (or to taste)
  • 4 patties Beyond Breakfast Sausage
  • 6 ounces vegan cheese shreds

Instructions

  1. Let the hash brown thaw if they're frozen.

  2. In a medium bowl, stir together the thawed hash browns, onions, green or red bell peppers, and mushrooms. Pour into one half of an 9" x 9" baking dish.

  3. Using the same medium bowl, stir together mashed tofu, onion powder, garlic powder, and salt and pepper, Pour into the other half of the baking dish.

  4. Place 4 Beyond Sausages and vegan cheese shreds on top.

  5. Bake at 350 degrees F for 25 minutes.
