This salad wasn't super fancy, but it was nutritious, tasty, and filling. The total cost was $2.25. Here's what I used and what it all cost

Ingredients

  • 3 cups green lettuce ($.30)
  • 1 small onion ($.10)
  • 3 tablespoons kalamata olives ($.75)
  • 2 ounces extra firm tofu ($.60)
  • 1 cup watermelon wedges ($.90)

Instructions

  1. Chop the green lettuce and place it in a bowl. Add sliced onion, kalamata olives, cubed tofu, mozzarella cheese shreds, and raspberry pecan dressing. Put some watermelon wedges on the side. Top with a sprinkle of black pepper and crushed red pepper flakes.
