I usually really like Bob’s Red Mill Baking Flour but it’s become harder to find. It’s become especially hard to find locally. I’ve never been 100% happy with other ready-made GF baking mixes. So, here’s my favorite mix that I find works well in any recipe.
It’s a 1 to 1 mix … just use as much of this as is called for in any recipe. It has a bit of xanthan gum in it already so it’s truly ready to substitute in any recipe you might choose.
Once mixed together, just store in an air-tight container at room temperature until you’re ready to use it! Alternatively, if you’re going to use this quite a bit later it can also be stored in the fridge or freezer as well. Either way, just make sure it’s air-tight.

- 2 cups white rice flour
- 2 cups brown rice flour
- 3/4 cup tapioca flour
- 3/4 cup oat flour
- 1/2 cup potato starch
- 2 teaspoons xanthan gum
