This delicious vegan meal menu featuring Fall and Halloween inspired food will please everyone from longtime vegans to the plant-based curious. Need something for Meatless Monday? Try these! Kids will love these super healthy meals, too!
Breakfast: Vegan Pumpkin Pancakes from Lazy Cat Kitchen
These look fluffy as clouds but hearty, too. I love the juicy blackberry garnish. Ania gives instructions for both gluten-free and regular flour.
Lunch: Butternut Squash and Roasted Red Pepper Pasta from Visions of Veggies
There’s a mountain of butternuts at my local farm market. I’ve got one set aside for this yummy looking pasta dish.
Dinner: Hearty Vegan Chili from Plant and Vine
Chili is so warming. I can’t wait to try this with some vegan and gluten-free cornbread. I saved this one for dinner because Kerrie gives wine pairing suggestions with her recipes. The chili looks amazing. I’ll take the GSM Blend to go with!
Dessert: Vegan Apple Roses from Elephantastic Vegan
These look so elegant but they’re fairly simple to make! These can be made ahead of time and set aside. I love that these make individual portions.
Don’t pout (much) if you’re gluten-free. You can always make your own puff pastry and here’s a recipe over at GFjules … she has her own blend of GF flour, but any all-purpose GF flour blend could work.
Know what else I love? Hearing from you! Please leave a comment or engage in whatever way you like! Seriously. I live for it.
