Vegan Frittata is easy and delicious when made with Just Egg! It only takes a few minutes to prepare and can even be customized for every taste.  Use your favorite vegetables and a bit of shredded vegan cheese and this goes from start to yum in about 5 minutes.

What is a Frittata?

Frittata is, traditionally speaking, an egg-based dish that’s pretty much a quiche without a crust. In this version, we’ve replaced the eggs with plant-based Just Egg and the result is delicious.

Frittata vs Quiche vs Omelet, What’s the Difference?

What’s the difference between a frittata, a quiche, an omelet, and scrambled eggs? They’re all egg-based dishes and are quite similar. But there are qualities that make each unique, too. Any can be easily made using Just Egg.

A frittata is like a quiche without a crust. It’s an egg mixture with vegetables and cheese poured into a dish and baked or otherwise cooked until the eggs are set.

A quiche is a frittata with a crust. Quiches have a crust that’s like a pie crust and then an egg mixture with vegetables and cheese that’s poured into a dish and cooked.

An omelet is generally thinner than a frittata or quiche and is an egg mixture that’s cooked in a skillet, usually with vegetables and cheese in the middle. It’s folded in half to serve. 

Scrambled eggs are an egg mixture that’s cooked in a pan like an omelet, but are stirred so the egg mix is broken up as it cooks.

Is Vegan Frittata Easy to Make?

Yes, this vegan frittata is so easy to make! This could hardly be any simpler. I’ve come to prefer this done in the microwave and then finished for a few minutes under a broiler in the toaster oven. It takes just a few minutes!

Vegetables in Vegan Frittata

In this recipe, I used steamed broccoli, mushrooms, and a few chopped tomatoes but use what you love and what you have. These are great with asparagus, chives, onions, diced potatoes or carrots, cauliflower, and spinach. I’m sure I’ve forgotten something, but you get the idea.

What’s in Just Egg?

Just Egg is a plant-based egg replacer that can be used in baked goods just like eggs but can also make fantastic scrambled eggs, frittatas, omelets, etc. It’s made primarily of mung beans with some oil and flavoring.

Microwave, Ovenbake, or Both!

This recipe can be made in a few minutes in the microwave. It can also be cooked in a regular oven and that takes about 20 minutes or so. I have come to prefer the method of cooking it in the microwave and then putting it under a broiler for a few minutes for some browning on top. 

Easy Vegan Frittatas!

This is really super simple. For each frittata, I used about 6 ounces of JUST Egg liquid. I like using a microwavable baking dish that’s just big enough for one serving. I found these square ramekins while thrifting but you can also get these round ones at Amazon.

Start with about 6 ounces of JUST Egg liquid.

Six ounces of JUST Egg is roughly equivalent to two eggs. I used six ounces but if you want a larger or smaller frittata just adjust the amount of JUST Egg accordingly.

Add your favorite vegetables …

I used some lightly steamed broccoli, canned mushrooms, and fresh tomatoes. Just sprinkle them into the JUST Egg liquid. Easy.

…and vegan cheese.

Toss on some vegan cheese shreds. I used So Delicious brand here but now there are so many choices. Another favorite is VioLife.

Then just microwave or bake or both.

I microwaved these frittatas, one at a time, for about 2 minutes. They were pretty close to being done and then I put them in the toaster oven for about 4 minutes under the broiler to get the top just slightly browned and the cheese fully melted.

Easy Vegan Frittata with Just Egg from Planted365 Plant Based Recipe

Vegan Frittata is easy and delicious when made with Just Egg! It only takes a few minutes to prepare and can even be customized for every taste.  Use your favorite vegetables and a bit of shredded vegan cheese and this goes from start to yum in about 5 minutes.

Cook Time 10 minutes
Total Time 15 minutes

Ingredients

  • 3 tblespoons chopped and lightly steamed vegatables (broccoli, cauliflower, carrots,
  • 6 ounces JUST Egg liquid
  • 1/4 cup vegan cheese shreds
  • 1 teaspoon onions powder, if desired
  • 1/2 teaspoon garlic powder, if desired
  • salt and pepper to taste
  • crushed red pepper flakes

Instructions

Chop your vegetables into small chunks. Place the vegetables into a microwave-safe bowl with a tablespoon of water and heat on high for about 2 minutes. Remove to a paper towel to absorb any moisture.

In a 10-ounce ramekin or small baking dish, pour 6 ounces of JUST Egg liquid. Gently stir in the steamed vegetables, onion and garlic powder, salt and pepper, red pepper flakes, and any other spices you'd like to add.

Sprinkle on the vegan cheese shreds.

Heat in the microwave on high for about 2 minutes. If it's not fully cooked, continue heating in 30-second increments until it's done. It's fine to just microwave this and it's delicious! This is usually how I make these.

Optionally, place the mostly cooked frittata into a toaster oven or conventional oven under the broiler at 400 degrees for about 3-5 minutes until the cheese is melted, the JUST Egg is firmed, and the top has slightly browned.
