I’ve been making some version of these no bake brownies for years. They’re always a crowd please when I bring them to any gathering and are delicious to keep on hand for a healthy snack during the day. They feel really decadent but they’re made of nuts, dates, and dark chocolate so it’s true, they’re pretty decadentm but good for you, too.

Ingredients in Double Chocolate No Bake Brownies
Walnuts add nutty flavor and make up a lot of the bulk of these brownies. I like to use soaked and lightly toasted walnuts but they’re also fine straight out of the bag.
Medjool Dates provide natural sweetness and a soft, chewy texture to these Double Chocolate No Bake Brownies, enhancing the rich chocolate flavor with their caramel-like depth.
Cocoa Powder adds deep, intense chocolate flavor, creating a rich taste that perfectly complements the natural sweetness.
Maple Syrup for just a touch more sweetness.
Dark Chocolate Chips are first melted and then spooned over the tops of the squares for another layer of delicious chocolate.
Flakey Salt, just a pinch sprinkled over the top, adds a subtle, savory contrast to all this sweetness, highlighting and enhancing the rich chocolate flavors with each bite. And it’s pretty!

Equipment Needed
This is a simple recipe with commonly available ingredients and can be made with just a food processor and a baking pan. I use this 12 cavity brownie baking pan because I really liked how it made neat little squares. But one like this works, too.
How to Make Plant-Based No Bake Brownies
These are ridiculously easy to make. Just blend up the nuts, dates, maple syrup, and cocoa in a food processor until it’s a squishy, sticky brownie base.
First, take a few minutes to soften the dates a little by soaking them in hot water for 4 or 5 minutes. To use the dates, drain the water and pat the dates dry with a cloth or paper towel.

Then form it into either individual brownie squares or use an 8″ x 8″ baking pan. I used a brownie pan and put a smal rectangle of parchment paper underneath which makes is a LOT easier to get them out!

Pour on some melted chocolate … about 1/4″.

For this, I melted some plant-based dark chocolate chips in a small metal pan over a larger pan filled with hot water. It only takes a few minutes. The little metal pan just floats on the water. Replace with more hot water if it cools off before the chocolate is melted.

And finally sprinkle on some chopped nuts and flake salt. Then let it cool in fridge or freezer for a few minutes until the chocolate hardens back up.

I’ve been making some variation of this for over fifteen years and it’s my most requested recipe wherever I bring it!
Double Chocolate No Bake Brownies (Vegan, GF}
These Double Chocolate No Bake Brownies are a rich, decadent treat that's vegan, gluten-free, and incredibly easy to make. Perfect for satisfying your chocolate cravings with wholesome ingredients—no oven required!
Ingredients
- 1 1/2 cups Medjool dates
- 1 cup walnuts
- 1/3 cup cocoa powder
- 1 tablespoon maple syrup
- 1 cup chocolate chips
- 1/4 cup finely chopped nuts
- flake salt
Instructions
- Soak the dates in hot water fo 4-5 minutes to soften. Drain, then pat dry with a cloth or paper towel before using.
- In a food processor, mix the softened Medjool dates, walnuts, maple syrup, and cocoa powder until it starts sticking to itself and the ingredients have been broken down into small, fine pieces. You know it's ready when the brownie dough will stick into a ball if you squeeze it in your hand.
- Line a baking pan or the squares of a brownie pan with parchment paper, leaving a bit hanging over the sides to remove the brownies easily.
- Press the brownie dough into the pan. If using a brownie pan put about a scant 3 tablespoons in each square. Then press down to pack the dough together and make it even on the surface.
- Melt the chocolate chips in a small pan over hot water. Then spoon the melted chocolate over the brownies.
- Sprinkle on some finely chopped walnuts and some flake sale.
- Place in the fridge to chill and let the melted chocolate harden.
- Cut into squares, remove from the pan, and enjoy!

I made this no bake brownie recipe. Wow, it’s great! 2 8×8 pans but I didn’t double the recipe for the sake of my processor. Added 2 1/2 tbsp of maple syrup instead of one. More melted chocolate chips for the “crust” so it would be thicker. My friends raved about them. I’ve been sharing your recipe! Each pan yielded 16 big pieces. Don’t forget the salt flakes.
