Boysenberry Tofu Sandwich Slices are sweet, savory and perfect for a quick and easy lunch.
The sweetness of the boysenberry syrup matches perfectly with a slice or two of Daiya Provolone … or your favorite vegan cheese.
Just put tofu slices in a lightly oiled pan with a few tablespoons of your favorite boysenberry syrup. Any syrup will work here. Maple would be good, and blueberry is great, too. We had the boysenberry on hand so that’s what I used. #usewhatyouhave
Simmer the tofu in the syrup for several minutes, turning once or twice. The syrup gets thicker and caramelizes on the tofu.
Pressed tofu works best here. Just press it between two plates or in an actual tofu press for 20 minutes or so. If you haven’t thought this far ahead, and to be honest I rarely do, just use the tofu straight out of the box. It works just fine, too.
Eventually, the syrup becomes a dark, lovely, crusty coat of delicious, sweet, berry flavor.
We had these on toasted sandwiches with Daiya cheese … the provolone is delicious. Chao makes an excellent vegan cheese that I actually like even better. Some lettuce and sliced onions was all this needed. Just Mayo or Veganaise is good on this, too.

Boysenberry Tofu Sandwich Slices are sweet, savory and perfect for a quick and easy lunch. Fast, delicious, and healthy using commonly found ingredients.
Ingredients
- 12 oz extra firm or firm tofu pressed for 20 minutes, optional
- 1/4 cup boysenberry syrup or maple syrup, or other favorite syrup
- salt and pepper to taste
Instructions

Saute the tofu in an oiled pan with a quarter cup of boysenberry syrup, or another favorite syrup.

Let simmer in the syrup for several minutes on each side, until the syrup has thickened and turned darker.

Serve on bread or buns with vegan cheese and onions and any other condiments you'd like.
