Enjoy Life Semi-Sweet Chocolate Mega Chunks: These generously-sized, dairy-free, and gluten-free chunks are perfect for adding to your favorite recipes or snacking on their own (I’m guilty of eating them straight from the bag!). The rich, smooth chocolate flavor is so tasty.

Larger Chocolate Chunks: I used Baker’s 56% Cacao Semi-Sweet Chocolate Baking Bars. They’re vegan and so delicious. I wanted a bigger chunk of chocolate in the center. I could have even used a full block since these are giant cookies.

Start by creaming together the wet ingredients. Plant-based butters will yield a slightly more grainy result, as in the photo below, but it’s all good and will be delicious in the end result.

Then stir in the dry ingredients. I used a hand mixer to get everything mixed together super quick. You can also use this weird-looking hand mixer. I have one but, it’s in storage while we move.

Gently fold in all the luscious tasty chocolate chunks until they’re evenly distributed.

For super giant cookies, use a regular ice cream scoop for doling out the dough. For smaller cookies, just use a smaller scoop. Add a block of the Baker’s Chocolate to the top and a sprinkle of flaky salt. Then bake at 375 degrees F for about 12 minutes for the large cookies and 9 to 10 minutes if making smaller ones.

Ingredients

Wet Ingredients

  • 3/4 cup smart balance original plant based butter, room temperature
  • 3/4 cup brown sugar
  • 3/4 cup white sugar
  • 2/3 cup Just Egg liquid
  • 2 teaspoons vanilla

Dry Ingredients

  • 2 3/4 cups Bob's Reb Mill 1 to 1 GF Flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • pinch nutmeg

Stir In

  • 10 ounces Enjoy Life, Semi-Sweet Chocolate Mega Chunks

On Top

  • 4 oz Baker's 56% Cacao Semi-Sweet Chocolate Baking Bar

Instructions

  1. Preheat oven to 375 degrees F
  2. In a large mixing bowl, cream together all the wet ingredients until they're blended together and evenly incorporated. This should only take about a minute.
  3. Sift in the dry ingredients and mix in using a hand mixer or by hand using a wooden spoon or dough mixing tool (see resources below. Mix until evenly incorporated and a good dough consistency. That will take about a minute with a hand mixer and a few minutes with a spoon.
  4. Gently fold in the Enjoy Life, Semi-Sweet Chocolate Mega Chunks until evenly distributed.
  5. For giant cookies, use an ice cream scoop and scoop out the dough onto a parchment-lined baking sheet. It's even better if the parchment has been buttered and floured lightly.
  6. Place a half or whole Baker's Chocolate block in the center of the dough and sprinkle with a little bit of flaky salt.
  7. Bake at 375 degrees for about 12 to 13 minutes. Allow to cool completely and store any leftovers in an airtight container for up to a few days. For smaller cookies, just use a smaller scoop and bake at 375 degrees F for 9 to 11 minutes until done.
