This is, seriously, the best salad dressing ever. Really. It has all the flavs. A little bit of just about everything and it turned out remarkably balanced and deliciously flavorful.

I made this for an unexpected get-together and … wow. It may be the best salad dressing ever … really! Indeed, it’s the best I’ve had in recent memory. I had to use what I had on hand and it worked.
Capers are the pickled berries of the caper bush. They’re usually pickled in a salty brine and have a distinctive mustard flavor. They’re a good source of rutin, which strengthens capillaries, and quercetin. Both are powerful antioxidants. I used a tablespoon of the caper brine in place of salt … it adds a bit more of the yummy caper flavor. For the photo, I used the dressing on an arugula salad with olives, but it would be suitable with just about any salad.
It’s also super inexpensive coming in at around $.44 per generous serving.

The Best Salad Dressing Ever (Really!)

Simple but incredibly flavorful, Vegan and plant-based. You'll love this delicious dressing!

Prep Time 10 minutes
Calories 162 kcal

Ingredients

  • 1/3 cup olive oil $.55
  • juice and zest of one lemon $.60
  • 3 tablespoons agave $.60
  • 1 tablespoon soy sauce or Bragg's liquid aminos $.10
  • 1 tablespoon dijon mustard $.05
  • 2 tablespoons capers $.50
  • 1 tablespoon caper brine
  • 2 tablespoons black olives $.20
  • 3 cloves garlic $.05

Instructions

  1. In a small bullet type blender, puree all ingredients until smooth ... about a minute

Tired this and sorry to say not one of my favorites. I do LOVE your Lime Chipotle sauce for the avocado. Now THAT is the best dressing ever!!! I use that on everything!

I made this last night, I substituted regular mustard for the dijon (I thought I had some but didn't) and 3 dates for the agave (again, I thought I had some). It was delicious! I think I have my new favorite dressing that I will be making all the time now! Thanks so much for sharing this! 🙂

I loved it! It really was as delicious as it sounded! My only question is… how long will it keep in the fridge? Will it freeze? It makes a good size batch that would've served my family of 6 probably 3 times or more… and it's so good I don't want to waste it… 🙂

Are the capers and olives raw or were they jarred and heated to seal the jar? Is that considered raw? Did you use raw soy sauce? How is the mustard prepared?
