The star of this simple recipe is beets. They aren’t just tasty they’re also really good for you! The intense ruby red with a hint of magenta color of beets (looks like Alizarin Crimson paint to me!) is due to their pigments called betalain which is anti-inflammatory. Beets also contain nitrates which is converted into nitric oxide (NO). Nitric oxide is great for cardiovascular function. Long story short, beets can be helpful in reducing blood pressure and atherosclerosis, reducing the risk of diabetes, dementia, among others. 

Start by Roasting the Beets

Peel the beet or beets. We’re going to need about a cup cubed. So just peel them and then cut them into quarters. Slice a few shallots into sections about a half-inch thick or use onions if you don’t have shallots on hand. And peel two to three cloves of garlic.

Place the beets, shallots (or onions), and garlic in a small-ish or medium-sized baking dish, drizzle with olive oil and sprinkle on the salt, pepper, and rosemary. Bake at 350 degrees F for about 30 minutes, until the beets are tender.

When finished baking, let everything cool down just a bit and then scoop everything into a high-powered blender. Add the plant-based milk and puree until smooth and creamy. Add more or less milk if needed for the right consistency. 

This is delicious as the sauce on a spring flavors pizza! It would also be good in a pasta dish!

Ingredients

  • 1 cup raw beets peeled and quartered
  • 1/4 cup shallots thick slices
  • 2 to 3 cloves garlic peeled
  • 2 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste
  • 3/4 cup plant-based milk more or less for desired consistency

Instructions

  1. Peel the beets and cut them into quarters. Also, cut the shallot into thick slices or chunks. Peel the garlic.

  2. Place the beets, shallots, and garlic in a medium-sized baking dish and drizzle with olive oil.

  3. Sprinkle on the salt, pepper, and rosemary.

  4. Bake at 350 degrees F for about 30 minutes until the beets are tender.

  5. Allow to cool just a bit and then scoop into a high-powered blender. Add about 3/4 cup of plant-based milk. Use more or less milk to get the desired consistency.

  6. Puree until the mixture is very smooth and any beet chunks or pieces are gone.

  7. Use in pasta as a sauce or on pizza.

  8. This sauce recipe can be doubled or tripled as it is. Just taste test for the salt and pepper and adjust to your liking.

  9. Extra sauce can be frozen in any air-tight container for up to a few months.
